So I've been on this italian food & mexican food kick for a WHILE now, The boyf. and I have shared 2 deep dish pizza's from Oregano's within the past 2 weeks, CARBS! --But I'm not really counting :) Any how, I got off working today and I was starving, which resulted in me making a vegan Latin Lasagna [no meat] included, it actually turned out pretty good.. Photo's of the steps below. It literally took about 10 minutes to prep!
I started off by boiling the lasagna for about 10 minutes [ basically until they were flimsy, but not soft] drained the water.. prepared the pan with a little bit of EVOO to prevent sticking. I prepared the sauce by using canned pasta sauce adding lots of fresh cilantro, salt, pepper, and the secret ingredient. . .Hot Sriracha! Heated that until it began to bubble and immediately removed it from the stove top. . . follow the photo's for the order to prepare :)

Ladies you should definitely try it! It was really good next time I will maybe add ground beef or turkey! Very flavorful
